Fruity Omelet with Maple Yogourt

Ingredients:

Method:

- 7 large eggs
- 1 cup(250 ml) fruit yogourt
- 1/4 cup (50 ml)maple syrup
- 1/2 cup (125 ml)Northumberland Coffee cream (18%)
- 2 tbsp (30 ml) Northumberland butter
- 6 fresh strawberries, hulled
- 6 banana slices
- 8 seedless green grapes
- Maple syrup
In a bowl, whisk eggs for 20 to 30 seconds. Stir in yogourt, maple syrup and Northumberland cream, stirring until smooth.
Set aside.
In a large non-stick skillet, heat Northumberland butter over medium heat and pour in egg mixture. Cover and cook omlette for about 8 minutes or until preferred doneness. Top with fresh fruit and drizzle with maple syrup. Cook for another 2 minutes.
Remove from heat and serve immediately.
