In a bowl, whisk eggs for 20 to 30 seconds. Stir in yogourt, maple syrup and Northumberland cream, stirring until smooth.
Set aside.
In a large non-stick skillet, heat Northumberland butter over medium heat and pour in egg mixture. Cover and cook omlette for about 8 minutes or until preferred doneness. Top with fresh fruit and drizzle with maple syrup. Cook for another 2 minutes.
Remove from heat and serve immediately. |
